
She runs the counter, welcomes travellers and regulars from all over the world and keeps things moving when the queue is out into the square. She also manages bookings with tour operators and groups, and works alongside Sergio during the Tastes & Tales of Gelato sessions, guiding visitors through the tasting, the stories and the culture behind artisan gelato.
Her role does not end with service. Sara is part of the daily conversation with Stefano in the laboratory. She watches, tastes, listens to what customers say, and brings all of it back as feedback on the product. How it spreads, how it holds, whether a flavour truly comes through, how the whole experience feels. That perspective is part of what keeps the standard where it is.
Because a good gelato is not only a question of technique. It is also about listening, dialogue and a steady eye for detail.
